Would you eat a lotus?
The flowers, seeds, leaves and roots of the Lotus are all edible and have been an important food source since ancient times. The flower of the lotus has been used in Chinese Traditional Medicine for the treatment of inflammation. The lotus seeds are also are anti-inflammatory, and can help treat high blood pressure, asthma, and cough symptoms. The combination of vitamins, dietary fiber, and complex carbohydrates found in lotus roots have been known to help manage blood sugar and cholesterol levels.
To prepare the root of the lotus plant as a snack, simply slice thin, drizzle with olive oil and season to taste before baking for 20 minutes in a 450 degree oven.
Optional: Marinate the lotus root in lemon juice before baking.
